Aaron Sanchez is a famous American chef, restaurateur, TV personality, cookbook author, and philanthropist.
Aaron and his twin brother Rodrigo, a New York City professional, were born in 1976, in El Paso, Texas, to Zarela Martinez, restaurateur and author of several cookbooks, and Adolfo Sanchez. He started cooking at an early age, helping his mother prepare traditional Mexican food for her restaurant business. In 1984, his family moved to New York and his mother launched the acclaimed Marimba cafe and Sánchez began cooking in a professional kitchen.
At the age of 16, Sánchez’s mother sent him to New Orleans to spend the summer working with chef Paul Prudhomme. In 1994, Sanchez graduated from The Dwight College and began working full-time for Prudhomme in New Orleans. Aaron was married to singer Ife Mora from 2009 to 2012. He also has a son named Yuma. In episode 21 of MasterChef season 9, he revealed that his mentor was Jonathan Waxman.

After working for Prudhomme, Aaron returned north in 1996 to study culinary arts at Johnson & Wales University in Providence, Rhode Island. That same year, he returned to New York and worked in the kitchen at the Patria under the nuevo-latino chef, Douglas Rodriguez. Sánchez met Alex Garcia, his future business partner, while working there. Garcia left Patria to open Erizo Latino in 1996, hiring Sanchez to help open the restaurant. Reviews have been positive, referring to the restaurant as casual and earthy.
He added that the dishes are deliciously healthy and that the best dishes in the kitchen are a great introduction to Central and South American cuisine. At L-Ray, Sanchez later became an executive chef. He then specialized in Caribbean and Gulf of Mexico foods. This was followed by another executive chef position at Isla, a restaurant inspired by pre-revolutionary Cuba. Sanchez worked under chef Reed Hearon at Rose Pistola after moving to San Francisco.
Eamon Furlong hired Sánchez in 2000 to open Paladar, a pan-Latin restaurant on the Lower East Side. After opening in February 2001 it won the Time Out New York award for the best restaurant on the Lower East Side that year. In their 2002 Guide to Eating and Drinking, they named it the best restaurant in Latin America. Paladar had been reviewed as ‘the colorful and lively circus of a restaurant that is equal parts serious cuisine and serious parties’ and was named a Critic’s Pick by New York magazine. Sánchez sold his stake in the Paladar restaurant in 2010.
Sanchez became the chef of the Mexican restaurant New York Centrio, which closed in 2012. Together with fellow chef John Besh in August 2014, they opened the other Johnny Sanchez in Baltimore. The Baltimore office closed in September 2017. In October 2014 in New Orleans, the couple opened a second Johnny Sanchez office. He joined MasterChef US Season 8 in 2017 as a judge alongside Gordon Ramsay and Christina Tosi. He replaced Graham Elliot, to sample and help judge the competitors’ cooking and pastry with Ramsay and Tosi.
He was to crown the next MasterChef. He is an expert in many cooking techniques and global cuisines. However, his specialty of cooking traditional Mexican cuisine is often used throughout the season. He starred as a guest in the first episode of Gordon Ramsay’s 24 Hours to Hell and Back Season 2 as an extra dispatcher in 2019. It was revealed that he lives two blocks away from the Trolley Café in New Orleans.

- 1/2 cup of sugar, or to taste
- 1 tablespoon ground cinnamon, preferably Mexican, for garnish

- Combine the rice and cinnamon stick with 4 cups of water in a blender; impulse to grind coarsely. Transfer to a large bowl and add another 4 cups of water; soak at room temperature for 3 hours.
- Blend the rice mixture in a batch blender until smooth. Strain through gauze or a fine sieve into a pitcher. Add the sugar; cold.
- Stir the horchata well before serving. Pour into glasses filled with ice; garnish with cinnamon sticks and a sprinkle of ground cinnamon.

- 2 sticks of unsalted butter, plus more for greasing
- 2 cups of sugar
- 4 large eggs
- 2 teaspoons of vanilla extract
- 2/3 cup of good quality unsweetened cocoa
- 1 cup all-purpose flour
- 1 tsp ground Mexican cinnamon (Canela)
- 1/4 teaspoon of chili powder or cayenne pepper
- 1/2 teaspoon of kosher salt
- 1/2 teaspoon of baking powder

- Preheat the oven to 350 degrees. Line a 9 x 13-inch baking sheet with parchment paper, leaving a protrusion on two sides. Press the paper into the corners of the pan and lightly grease the paper with butter.
- Melt the 2 sticks of butter in a non-stick saucepan over medium-low heat; do not boil. Remove from heat and let cool slightly. Add the sugar, eggs and vanilla to the saucepan and mix with a wooden spoon until well blended.
- Add cocoa, flour, cinnamon, chili powder, salt and baking powder and mix until smooth. Spread the batter into the prepared pan and bake until a toothpick inserted in the center comes out fudgy, 20 to 25 minutes. Cool in a skillet on a wire rack, then use parchment paper to lift the brownies before slicing.

- 1 flank steak, stripped of excess fat
- 1 cup pickled jalapenos, including carrots and onions from the jar

- 8 tortillas in mais
- 1/4 cup white onion, coarsely chopped
- 1/4 cup coriander leaves
- 2 tablespoons of Arbol sauce
- 1 tablespoon of canola oil, plus more if needed

- Cover the flank steak on one side with the pickled jalapenos, then flip and let sit at room temperature, covered for 1 hour.
- Preheat the grill or grill.
- Season both sides of the steak with salt and pepper and place it on a hot grill or under the grill. Cook the steak for 5-6 minutes on each side (medium-rare), then cut into 1/4-inch pieces.
